My first time in college I earned a math degree with a 3.2 overall gpa. It has now been a few years after graduation, and I am considering going back to school to do pre-dental courses. How much weight will dental admissions boards put on my first degree when I apply? Could I lessen its influence if I take my pre-dental courses at a school other than my alma mater?

If you’ve taken the prerequisite undergraduate classes, any major is fine. If you’re missing some prereqs, you might have to take them before you apply, check with the school you are applying to. Math sounds like an excellent major and you have a decent GPA-you can emphasize on your application how math taught you logical reasoning skills and problem-solving skills.
